Today's post ends our weeklong series of recipes. We hope you've enjoyed the roadmaps leading to the culinary creations that we have shared with you. The finishing touch to any meal is the dessert, of course. And we hope you enjoy today's dessert recipe, which can be complemented nicely with the purchase of some specialty commercial coffee cups. LEMON BARS (makes 20 squares):

Ingredients (Crust):Lemon Bar
  • 1/2 pound unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 2 cups sifted flour
  • 1/8 teaspoon salt

Ingredients (Filling
):
  • 6 extra large eggs. room temperature
  • 3 cups granulated sugar
  • 2 tablespoons grated lemon zest (4 to 6 lemons)
  • 1 cup freshly squeezed lemon juice
  • 1 cup sifted flour
  • Confectioners' sugar, for dusting

Preparation (Crust)
:
  • Preheat the oven to 350 degrees F.
  • Cream butter and sugar with electric mixer until light.
  • Combine flour and salt in small bowl.
  • Add mixture to butter, and mix on low speed until just mixed.
  • Dump the dough onto well floured board and form ball.
  • Flatten dough with floured hands and press into 9" x 13" by 2" baking sheet.
  • Build dough 1/2" up on all sides.
  • Chill dough for 5 to 10 minutes.
  • Place dough in oven and cook crust for 15 to 20 minutes, until golden brown.
  • Remove from oven and cool on wire rack.

Preparation (Filling
):
  • Mix together eggs, granulated sugar, lemon zest, lemon juice, and flour in small bowl with wire whisk.
  • Pour mixture over crust in pan and let settle so filling is distributed evenly across crust.
  • Place in oven and bake for 30 to 35 minutes, until filling is set.
  • Remove and cool on wire rack for 15 minutes.
  • Dust with powdered sugar.
  • Cut into 20 squares and serve.
