What's Hot in 2012: Latest Trends form NRA Show

The National Restaurant Association held its annual show last week in Chicago, and we want to share some of the top food trends that were on display during the show.  Writer Bret Thorn wrote the article, Top Food Trends from the 2012 NRA Show on Nation's Restaurant News (NRN) website, and here are some excerpts from it.

Unlike previous years, pricing was not the prevailing theme- food quality was. Premium products were on display as foodservice operators try to get the one-up on their competition. Free-range pork from Spain and coffee from single origins were trending at the show. Other highlights included:

  • Desserts- Both rich desserts and low-sugar, multigrain desserts were appealing to operators, while smaller pre-portioned single serving desserts were also a hit.
  • High- tech foods- Fruit juice with lecithin stored in nitrogen charged cannisters were served in foam form, like whipped cream. Frozen pearls of balsamic vinegar or hot sauce intended to burst with flavor in your mouth were also featured.
  • Southeast Asian flavors were in demand at show. Foods and sauces from Thailand and other countries were featured.

Cleaning Your Vic Firth® Gourmet Mill


  • Unscrew the top nut and remove the top. Empty any remaining salt or pepper.
     
  • Turn the mill upside down and pop out the rod by tapping it firmly against a hard surface.

  Trash bins full of table scraps, cardboard, cans and bottles have always been a byproduct of the restaurant business. It doesn't have to be, says Elizabeth Lessner, president of Betty's Family of Restaurants.

By the end of this year, she hopes her business - which runs Betty's Fine Food & Spirits, the Surly Girl Saloon, Tip Top Kitchen & Cocktails and Dirty Frank's Hot Dogs - will become central Ohio's first zero-waste restaurant group.

Lessner and her employees are attempting to significantly reduce the amount of waste they produce, then find a way to recycle, reuse or compost everything that is left. The goal is to prove that green, eco-friendly initiatives and waste-reduction programs are possible and economical.

They're off to a decent start.

All four restaurants recycle all the cardboard, glass and aluminum cans that come through the door. They serve a lot of draft beer, to reduce the number of empty beer bottles, and canned beer because aluminum is easy to recycle. All to-go orders and leftovers are packaged in recycled paper or corn-plastic containers.

The Surly Girl Saloon and Betty's use energy-efficient lighting, and the Tip Top and Dirty Frank's will soon follow. Restaurants use five times as much energy per square foot as other commercial buildings, and energy accounts for 30 percent of their annual operating costs, according to the National Restaurant Association. Replacing one incandescent bulb with a compact fluorescent can save a restaurant $30 over the life of the bulb.

The table-scrap goal is a bit more difficult. The discards can't be composted on site because the process can be a messy, smelly and rat-drawing affair. Instead, they're hoping to ship it to the Solid Waste Authority of Central Ohio, which coordinates the composting of Columbus yard waste.

Discarded glass might go to local artists, recycling centers or manufacturers such as Weisenbach Recycled Products. (A video of Weisenbach recycling the bottles from the Tip Top and Betty's can be viewed on their Web site, www.recycledproducts.com.)

Consultant Michael Minnix, president of Eartha Limited, is going to help the Betty's group conduct a waste audit and refine their recycling efforts. Eartha Limited is a Columbus-based environmental consulting company that can help businesses navigate waste contracts and find grants and tax incentives to help in their environmental efforts.

Minnix says restaurants can go green without spending a lot of green.

Reducing waste can be as simple as switching from paper towels to electric hand-dryers in the ladies' room, Minnix said, and recycling can be as easy as putting a trash bin for glass or cans behind the bar. "Most of these programs don't cost a thing," he said. "And the money they save can offset the cost of bigger changes like more-efficient lighting or kitchen equipment. It can be a cost-neutral process."

It isn't yet clear how much the recycling and composting will cost - or save - Betty's in dollars and cents, but "we think it will be a cost-saver in the long run," Lessner said. "The immediate goal is to make all of this as cost-effective as possible."

Converting to energy-efficient lighting is already paying off, with the Surly Girl Saloon and Betty's on track to save a combined $8,100 a year in electricity costs. The Surly Girl Saloon replaced 136 bulbs with more-efficient models, at a cost of about $3,000. After energy incentives and rebates, the total cost was $1,626.

Greener products are becoming more affordable, which is helping Lessner's efforts.

Recycled to-go containers now are cheaper than foam boxes, Lessner said, because Ohio State University started using the recycled variety.

Recycling and energy-reduction strategies can sometimes pay off in customer count as well. "Some people care and some people don't. But this will make the people who do care about the environment more loyal," Lessner said.

"The core value of the company is that we want to leave our communities better than we found them. It sounds hokey, but it's true."

Sandwich and pizza prep tables are an important part of your kitchen setup, if your menu features sandwiches, salads, or pizzas. Before you buy, you'll need to decide on the size and food pan options you need for your bar or restaurant application.

Superior Sandwich Prep Table, 12.0 cu.ft., 10 Pan CapacityKitchen prep tables base their capacity by the number of 1/6 size (sandwich prep) or 1/3 size food pans (pizza prep) they will hold in the top opening, like a 8 pan, 12 pan or 30 pan unit. When ordering a sandwich prep unit, you will need to know how many food pans you will need to hold your menu items. You can use larger pans, however, using your menu items, calculate how many 1/6 size pans you will need to hold these products. Compare how many 1/6 size pans you need to the size options listed. 1. A cooker/warmer will take precooked foods from a refrigerated state to serving temperature. NSF guidelines state cookers must take a 40 degrees F product to 140 degrees F in forty minutes or less.

2. Cooker/warmers have higher wattage to be able to cook the product. This kitchen cooking equipment is ideal for thawing frozen soups and holding soup at NSF-safe serving temperatures. They can retherm a prepared food from frozen or refrigerated to piping hot.

3. For proper use of a food warmer, use a restaurant range to cook the product on the restaurant stove top burner. Then, keep it at serving temperatures in a restaurant counter top warmer. The warmer will effectively keep hot foods and sauces at consistent proper serving temperature levels above 140 degrees F.

What do I need with the counter top warmers?
Most warmers are sold without the food pans, so be sure to check the specifications for the correct size pans and covers. Always keep extra pans / insets to help rotate the food product!

What size pans should you order for the counter top warmers?
The round warmers use 7 quart or 11 quart inset pans and covers. Superior offers adapter plates to hold two, four, or seven quart insets.

The 12 x 20 and 12 x 27 rectangular warmers use the standard hotel or steam table steamer pans. These are available in full and fractional sizes. (Most use full, half and/or third size pans.)
To hold the pans in place, use adapter bars available in 12 or 20 for the standard 12 x 20 or the oversized model.

What is the best way to maintain the temperature of hot food?
To maintain the hot food temperature while holding the food product, be sure to use a cover with the inset, maintain the proper water level in the well, and stir the food product regularly.The gentle moist heat will maintain the food temperature, but will not raise the serving temperature. Solid, slotted covers, and hinged notched covers are available on round warmers; solid, slotted, dome, and telescope covers are available on the 12 x 20 warmers.

What electrical power will I need for counter top cooker/warmer or warmer?
Most brands of counter top warmers include a cord and plug, and have a 120 Volt NEMA 5-15P plug.
As a matter of standard policy, always consider the wattage and/or voltage, and plug style of any appliance before purchasing.

What does the term "Use wet or dry" mean?
Most of these commercial kitchen models use water to better transfer the heat from the heating elements to the food product, providing even temperatures and less hot spots or scorching of the food. If you let a water only model run dry, you will burn out the element. The wet or dry model works best with water (wet), but you will not hurt it if it runs dry.
