Blenders are an important piece of bar equipment and several variables help determine the blender that's right for you! They are used to make drinks and process food products such as smoothies. Blenders vary in power output, capacity, and are made from materials such as stainless steel and polycarbonate.




There are several questions to ask yourself before purchasing your blender:

  • What type of drinks or food products will I be using the blender for?
  • How many customers will I be serving in a specific time period?
  • Will I be serving a variety of frozen drinks or food products simultaneously?
  • Are noise levels a consideration?
  • What material works best in my working environment (glass, plastic, stainless)?    

As with other foodservice supplies, blenders come in a variety of sizes. They are available with containers from 32 oz. to One Gallon. The power of your blender is dictated by the horsepower of your model, so bars and restaurants serving high volumes of frozen drinks require higher horse-powered models. The last thing you want to have happen is to have your blenders break down during a busy rush.

Maintenance and cleaning of blenders is important, and blenders should be rinsed well between uses and cleaned thoroughly each night. Otherwise, bacteria and fruit flies will thrive. Blenders are usually easy to clean, as the parts are removable and the plastic, glass, or stainless steel containers are soakable.

Clear glass and plastic blenders allow the process to be seen while it is happening. If the blenders are in sight range of the customers, they can see their drink being blended. This is also appealing to the eye as it reinforces the soothing chill of the drink. Sound proof covers are available on some models.

The removable parts such as clutches, gaskets and blades break after heavy use, but replacement parts are readily available for most models. It is important to choose the right model for your needs; otherwise, you may be replacing parts more frequently. Some blades are not manufactured to crush ice in high volumes, so be wary of this when considering your purchase. Commercial kitchen equipment that is energy efficient can earn an Energy Star rating based on regulated criteria, and can save you hundreds of dollars per year.

To help counter these costs, ENERGY STAR helps restaurant owners and operators improve the performance of their facilities and equipment while reducing energy costs. Restaurants that invest strategically can cut utility costs 10 to 30 percent without sacrificing service, quality, style or comfort– while making significant contributions to a cleaner environment.

Restaurants, or facilities with commercial kitchens, feature the majority of this equipment. They are one of the highest energy consumers of buildings– using approximately 250,000 Btu/sq.ft. This is roughly 2.5 times more energy per square foot than other commercial buildings. ENERGY STAR qualified equipment can be an answer to mounting energy bills. Purchasing ENERGY STAR qualified commercial food service equipment as a package for new kitchen construction or as a replacement for aging equipment, can save significant amounts of money and energy on foodservice operators' electric, gas, water and sewer bills. Qualified products can save up to as much as 50 percent over their conventional counterparts.

Realizing that foodservice operations are similar to manufacturing facilities, many designers apply IE principles, also know as lean manufacturing, when developing or remodeling kitchens.

Henry Ford was among the first in the U.S. to integrate IE principles into his auto manufacturing plants with the assembly line. Toyota saw success with its own lean system that identifies the top seven elements of waste: transportation, inventory, motion, waiting for the production step, overproduction, overprocessing and defects.

Which Ice Is Right For You?

Types of Ice and Which Industrial Ice Maker to Choose: Types of Ice

Contour cubes are great for use with mixed drink restaurant glasses, carbonated beverages, ice retailing, salad bars, ice displays and ice dispensing. These cubes have the advantages of nestling in a glass for high displacement, meaning better quality drinks for customers and better profits for the owner. The cube's unique design minimizes splashing and waste when pouring from a bottle or dispensing gun. We recommend Scotsman Contour Cubers for this application. These are available through special order from a Sales Associate.




Select
half dice cubes for beverages, and choose dice cubes for bagged ice for use with ice merchandisers. We recommend the Manitowoc S-Series for this application.






Nugget or cubelet ice
is soft, so it will blend quicker, smoother, quieter, and with better color absorbency than cube ice. It is a good choice for blended drinks, smoothies, margaritas, frozen cappuccino, and frozen juices. Nugget or cubelet ice is chewable, and helps prevent patients from choking in health care facilities. We recommend the Manitowoc Ice Maker Dispenser for this application.







Flake ice
molds to any shape for convenient use in salad bars and meat displays. It is also great for blended cocktails, and in health care facilities for beverages and therapeutic uses. We recommend the Mantiowoc Q-Series or Undercounter Flaker for this application.

 

Proper Transfer:

When transferring ice from your ice machine, use a dedicated container as an ice bin to help avoid cross contamination. Ideally, this container should also be dishwasher safe, so that it can be washed regularly to eliminate bacteria. Ice Scoops should be kept in a scoop caddy to prevent contamination of the ice.
