Blenders are an important piece of bar equipment and several variables help determine the blender that's right for you! They are used to make drinks and process food products such as smoothies. Blenders vary in power output, capacity, and are made from materials such as stainless steel and polycarbonate.




There are several questions to ask yourself before purchasing your blender:

  • What type of drinks or food products will I be using the blender for?
  • How many customers will I be serving in a specific time period?
  • Will I be serving a variety of frozen drinks or food products simultaneously?
  • Are noise levels a consideration?
  • What material works best in my working environment (glass, plastic, stainless)?    

As with other foodservice supplies, blenders come in a variety of sizes. They are available with containers from 32 oz. to One Gallon. The power of your blender is dictated by the horsepower of your model, so bars and restaurants serving high volumes of frozen drinks require higher horse-powered models. The last thing you want to have happen is to have your blenders break down during a busy rush.

Maintenance and cleaning of blenders is important, and blenders should be rinsed well between uses and cleaned thoroughly each night. Otherwise, bacteria and fruit flies will thrive. Blenders are usually easy to clean, as the parts are removable and the plastic, glass, or stainless steel containers are soakable.

Clear glass and plastic blenders allow the process to be seen while it is happening. If the blenders are in sight range of the customers, they can see their drink being blended. Stainless steel blenders often sweat, and this can be seen if pouring the finished product into glassware in front of the customer. This is also appealing to the eye as it reinforces the soothing chill of the drink. Sound proof covers are available on some models.

The removable parts such as clutches, gaskets and blades break after heavy use, but replacement parts are readily available for most models. It is important to choose the right model for your needs; otherwise, you may be replacing parts more frequently. Some blades are not manufactured to crush ice in high volumes, so be wary of this when considering your purchase. Smoothies and other food products require special restaurant food supplies, such as heavy duty blenders/food processors.

  Trash bins full of table scraps, cardboard, cans and bottles have always been a byproduct of the restaurant business. It doesn't have to be, says Elizabeth Lessner, president of Betty's Family of Restaurants.

By the end of this year, she hopes her business - which runs Betty's Fine Food & Spirits, the Surly Girl Saloon, Tip Top Kitchen & Cocktails and Dirty Frank's Hot Dogs - will become central Ohio's first zero-waste restaurant group.

Lessner and her employees are attempting to significantly reduce the amount of waste they produce, then find a way to recycle, reuse or compost everything that is left. The goal is to prove that green, eco-friendly initiatives and waste-reduction programs are possible and economical.

They're off to a decent start.

All four restaurants recycle all the cardboard, glass and aluminum cans that come through the door. They serve a lot of draft beer, to reduce the number of empty beer bottles, and canned beer because aluminum is easy to recycle. All to-go orders and leftovers are packaged in recycled paper or corn-plastic containers.

The Surly Girl Saloon and Betty's use energy-efficient lighting, and the Tip Top and Dirty Frank's will soon follow. Restaurants use five times as much energy per square foot as other commercial buildings, and energy accounts for 30 percent of their annual operating costs, according to the National Restaurant Association. Replacing one incandescent bulb with a compact fluorescent can save a restaurant $30 over the life of the bulb.

The table-scrap goal is a bit more difficult. The discards can't be composted on site because the process can be a messy, smelly and rat-drawing affair. Instead, they're hoping to ship it to the Solid Waste Authority of Central Ohio, which coordinates the composting of Columbus yard waste.

Discarded glass might go to local artists, recycling centers or manufacturers such as Weisenbach Recycled Products. (A video of Weisenbach recycling the bottles from the Tip Top and Betty's can be viewed on their Web site, www.recycledproducts.com.)

Consultant Michael Minnix, president of Eartha Limited, is going to help the Betty's group conduct a waste audit and refine their recycling efforts. Eartha Limited is a Columbus-based environmental consulting company that can help businesses navigate waste contracts and find grants and tax incentives to help in their environmental efforts.

Minnix says restaurants can go green without spending a lot of green.

Reducing waste can be as simple as switching from paper towels to electric hand-dryers in the ladies' room, Minnix said, and recycling can be as easy as putting a trash bin for glass or cans behind the bar. "Most of these programs don't cost a thing," he said. "And the money they save can offset the cost of bigger changes like more-efficient lighting or kitchen equipment. It can be a cost-neutral process."

It isn't yet clear how much the recycling and composting will cost - or save - Betty's in dollars and cents, but "we think it will be a cost-saver in the long run," Lessner said. "The immediate goal is to make all of this as cost-effective as possible."

Converting to energy-efficient lighting is already paying off, with the Surly Girl Saloon and Betty's on track to save a combined $8,100 a year in electricity costs. The Surly Girl Saloon replaced 136 bulbs with more-efficient models, at a cost of about $3,000. After energy incentives and rebates, the total cost was $1,626.

Greener products are becoming more affordable, which is helping Lessner's efforts.

Recycled to-go containers now are cheaper than foam boxes, Lessner said, because Ohio State University started using the recycled variety.

Recycling and energy-reduction strategies can sometimes pay off in customer count as well. "Some people care and some people don't. But this will make the people who do care about the environment more loyal," Lessner said.

"The core value of the company is that we want to leave our communities better than we found them. It sounds hokey, but it's true."

Draft Box Dispenser Tips

Cold plate and coil draft boxes are ideal for volume applications where commercial bar equipment and draft beer towers are not available. This is the ideal catering supply solution for businesses seeking efficient draft beer dispensing at remote locations. Superior Products has these systems on hand, ready to ship.

Draft Boxes

If draft boxes are maintained properly, a continuous flow of cold draft beer (36-38 degrees) can be drawn. We recommend keeping the keg cool using a utility tub or insulated keg jacket. When using a cold plate draft box, drain off all excess water as the ice melts. Watch so ice does not "bridge". Ice should be in contact with the cold plate. With coil cooling boxes, a combination of ice and water (water bath) will insure optimum cooling. 15 lbs. of applied CO2 pressure is required to dispense beer from cold plate draft boxes and 50 foot coil boxes. a 3/8" I.D. beer line (jumper hose) should be used, connecting the tap to the draft box.
 

 

How to Maintain Your Cooler to Receive the Most Efficient and Successful Operation

When properly maintained, your bar coolers, freezers, reach-in and undercounter refrigeration units will give you many years of trouble-free service.

Your Bar Equipment Cooler will give you years of superior performance if you follow these simple suggestions.

CONDENSER
If you keep the Condenser clean you will minimize service calls and lower your electric costs. The Condenser is accessible by removing the Louvered Grill on the front of the cooler. Although your Superior Cooler uses a minimum amount of electricity due to superior insulation in the cabinet and doors, it is very important to keep the Condenser clean. The cleaner the Condenser, the less the cooler will run. Cleaning of Condensers should be done when needed depending upon regional conditions and the location of your Cooler. Use compressed air to blow the dust and grime from your Condenser. A stiff brush will help. You must be able to see through your Condenser.

VOLTAGE
When your Superior Cooler was installed the installation person should have checked your wiring to see that you had plenty of current to properly operate the refrigeration unit. Under no circumstances add additional loads between the source of power and the Cooler. Do not plug other electrical units into the same wall outlet your Cooler is plugged into or plug electrical units on the same circuit. Do not use an extension cord.

TO CLEAN THE CABINET
The exterior may be wiped clean with soap and water. Use a good stainless cleaner on the countertop and the doors. The interior of the Cooler should be cleaned periodically and we recommend a mild solution of baking soda and water which will help reduce any inherent odors. Do not use harsh or abrasive cleaners on any surface of the interior.

REPLACEMENT PARTS
Superior maintains indefinitely a record of the Cabinet serial number of your Cooler. If, at any time during the life of your Cooler a part is needed, you may obtain this part by furnishing the serial number to Superior.

ELECTRICAL REQUIREMENTS
There are several factors that will affect the proper operation of your Superior unit. Among these factors, the electrical installation is the most important and should always be checked before connecting your Superior cabinet. The following steps should be taken:
1. Make sure the circuit is dedicated exclusively to your Superior unit.
2. Make sure the electrical installation complies with national, state, and local codes.
3. Make sure the circuit is properly ground.
4. Check circuit for proper voltage at receptacle (+/-10% 115 Volt) (- 5% + 10% 208/230 Volt)
5. Make sure that the wire gauge and breaker sizes are correct and comply with the minimum allowance for voltage drops (refer to NEC table).

WARNING: FAILURE TO COMPLY WITH THESE REQUIREMENTS MIGHT RESULT IN PERSONAL INJURY AND/OR PROPERTY DAMAGE, AND WILL VOID WARRANTY.

CABINET INSTALLATION AND SET UP CHECKLIST
1) Make sure cabinet is plugged into dedicated outlet. Before plugging in cabinet check to make sure voltage is adequate for your cabinet. Do not use an extension cord, this will void cabinet warranty.
2) Follow installation instructions for your specific cabinet. Each cabinet is shipped with specific installation and set up instructions. It is very important to read all information sent with your new cabinet
3) Make sure shipping blocks (slide doors) and door support brackets (swing doors) are removed. Doors will not function correctly if this step is not followed.
4) Make sure that your cabinet is leveled correctly. Follow specific instructions with your cabinet and use caster shims were they are needed. Make sure that legs and casters are installed per instructions. If directions are not followed this may cause premature unwarranted failure of cabinet legs or casters. If your cabinet is not level this can cause performance problems that will not be covered under warranty repairs.
5) When cabinet is set in its final location, make sure the specific clearance guidelines are followed. These are very important for ventilation in the condensing unit area. If not followed can cause premature compressor failure.
6) Follow altitude adjustment for temperature control if applicable.
